These courses will teach you to best manage the most useful hand tool in the kitchen: your chef's knife. You will learn: proper grip; knife safety; the best knife for the job; proper honing, and maintenance; and common cuts like slicing, dicing and mincing as well as chef cuts including batonnet, julienne, and brunoise. This course will be taught by NPC's instructor, Eve Victory, CHE. The course will include lecture and video followed by a full-scale lab in a state-of-the-art kitchen where you will be provided a variety of vegetables with which to learn and practice. You may bring your own chef's knives/knife kit or use what is in the kitchen.
